This is a folk dish often eaten in Jeju. The name geutjeot comes from the Jeju expression for abalone intestines, “geut.” It has historically been regarded as a scarce dish. Abalone intestines are tossed with salt, fermented for about 15 days, then mixed with green and red chili peppers and ground sesame seed to taste. This is a specialty dish that allows you to enjoy the deep flavors and fragrance of abalone. In some cases, it is added with thinly-chopped small abalone or conch, which helps to give some bulk and texture to the dish. Its salty and rich taste goes perfectly with steamed rice. Another way to enjoy the dish is to use it as a dipping sauce for grilled pork belly or add flavor to leaf wraps with spicy stir-fried pork.
