    • Seoritae is a bean with a black hull and green flesh. It is harvested after the first frost comes down in October and is named as such because it is said to grow with the frost (seori). When soaked, these black beans become quite tender, which, along with their natural sweetness, have led to them being used in steamed rice and rice cake dishes. Koreans say that beans are “beef from the field” because beans have high protein content. In particular, black beans stand tall above others in terms of nutrition. When soaked, peeled, and ground finely, one can make a cold soup from seoritae. Chill the soup in the refrigerator, salt to taste, and add noodles to create the noodles in cold black soybean soup. One can garnish the soup with julienned cucumber and tomatoes.
